Cooking Directions
Place roast in a shallow pan or on the grill and roast at 350 degrees F. for 1 hour (20 minutes per pound), until internal temperature on a thermometer reads 145 degrees F. Remove roast from oven; let rest about 5 to10 minutes before slicing to serve.
FOR ROASTS and TENDERLOINS Cook to 145 F with 4 minute rest.
Just remember, whatever your final target temperature is, take the roast out five degrees before that and let it coast to its final doneness.
