Sausages
For century's farmers, cook's and common folk have looked for ways to fully utilize scraps from crops and animals, raised and used as food sources. Sausage making is one of those simple ways to fully use most parts of the animals we raise.
Old world sausage making used only the finest cuts of meat and the freshest herbs and spices that were available. Traditionally the sausage maker only used Pork, Beef or Lamb seasoned and injected into casings or formed into logs. Today however companies produce sausage using Beef, Pork, Lamb, Chicken, Turkey and Seafood just to name a few. Nothing is limited and only bound by the imagination.
At the Village Butcher Shoppe, we love making sausage. We use recipes passed down from our grandparents and developed some of our own over time. Throughout the year, we produce about 40 different fresh and smoked sausage. Some are based on customer recommendations and some are private blends that our customers have asked us to make from their family recipes.
